Cleaver & Wake reveals its plans for a New Year to remember

NOTTINGHAM’S new finer dining restaurant, 1 The Island Quarter’s Cleaver & Wake, has revealed its plans for the festive season, with two showstopping New Year events.

Allowing guests to see out the year in exquisite style, Cleaver & Wake will be pulling out all the stops with a black-tie ball complete with a three course meal at Upstairs at Cleaver & Wake, and an eight-course tasting menu crafted by chef patron, Laurence Henry, downstairs in the restaurant.

The glittering New Year ball will begin at 7.30pm with a dazzling champagne reception and delicious canapés, followed by a decadent three-course meal.

Guests will be able to indulge in the Mi-cuit Salmon which features lightly smoked Scottish salmon, served with radish, Keta caviar and Champagne sauce to start; the Highland Venison Wellington served with parsnip, smoked beetroot, blackberry and truffled venison jus as a main; and the Clementine Crème Brûlée with spiced shortbread to finish.

For a meat-free option, diners can enjoy the Jerusalem Artichoke Velouté which features burnt pear, walnut ‘granola’ and black winter truffle, served with toasted sourdough to start; and a main of the Celeriac and Winter Truffle Pressing with Pedro Ximénez glazed maitake mushroom, nasturtium and brown butter broth.

Diners will also be able to enjoy live entertainment throughout the night followed by a set from popular DJ, Steve Cutts, who’ll be serving up all the party classics from 10.00pm to help revellers dance the night away until 2.00am.

The ticketed event will cost £125 per person.

John Whitehead, food, beverage and events project director at The Island Quarter, said: “This year marks the very first Cleaver & Wake New Year and after the excellent few months we’ve had since we opened in October, we definitely wanted to see off the year in style. Our exciting New Year Ball is the perfect chance for guests to don their finery and enjoy a taste of the high life with a magnificent evening of fine food and great entertainment and an all-round fantastic way to ring in 2023.”

The second of the venue’s two New Year celebrations, is the perfect treat for foodies, featuring an indulgent eight-course tasting menu that will take diners on an exciting culinary journey.

The delicious dégustation will feature premium quality seasonal ingredients and Cleaver & Wake’s signature bold flavours and tantalising pairings.

Dishes include Colchester oyster poached in dashi, with oyster bavaroises and royal Oscietra caviar; Highland venison cooked over juniper, with parsnip, chestnut, chou farci of venison haunch and marrow and truffled venison jus; pre dessert of burnt apple parfait, pommes doubles granita and a Chocolate Forest dessert with hazelnut, truffle and cep.

The unique dining experience will be accompanied by live entertainment and cost £150 per ticket.

Laurence Henry, chef patron at Cleaver & Wake said: “We’re celebrating our first Cleaver & Wake New Year the only we know how, with fantastic food and an exciting dining experience. Our special New Year’s Eve tasting event is set to be a really special evening and the chance for guests to taste some really fantastic dishes. We’ve worked hard to craft a menu that celebrates the very best produce from the British Isles and some of my favourite dishes. We couldn’t think of a better way to welcome in the new year.”

Throughout December Cleaver & Wake will also be serving its newly launched festive menu.

Standout dishes include winter squash agnolotti featuring crown prince squash, Cropwell Bishop stilton, almond and quinoa granola; and halibut roasted in foaming butter, salsify, smoked eel and champagne velouté.

Over the course of the festive season, Cleaver & Wake will be open every day apart from Sunday 25 December and Monday 26 December and will re-open from Wednesday 28 December until New Year’s Eve on 31 December. The restaurant will then be closed until 18 January.
